Pecan Cottage Rolls

A tasty snack.

• 3 eggs
• ½ cup pecans
• 1 small onion
• 1 tbsp soy sauce
• 1 cup low fat cottage cheese
• ½ cup finely grated carrot
• ½ cup dry breadcrumbs
• 1 cup one minute oats
• 3 sheets puff pastry
• 1 tbsp milk

Method:

Place eggs, pecans, onion, soy sauce, and cottage cheese into a food processor and process until fine.
Transfer to a large bowl and mix in carrot, breadcrumbs and oats. Cut pastry sheets in half and brush lightly with milk. Divide mixture into six even portions and spoon down one edge of each half sheet. Roll to enclose filling. Cut each log into 6 even lengths. 
Brush with milk and prick with a fork. 
Bake in a hot oven (200º C) for 15-20 minutes or until crisp and golden. Makes 36 party size rolls which can be kept frozen for 2 months.
