Tangy Fruit Loaf

Ingredients
  • ¼ cup poly unsaturated oil
  • ½ cup brown sugar
  • 1 egg
  • 3 sliced bananas
  • ½ cup dates
  • Juice of 1 lemon
  • 1 ½ cups wholemeal flour
  • ½ cup wheat germ
  • ½ tspn baking powder
  • ½ tspn baking soda
  • ½ cup chopped Pecan nuts

Method

Beat oil and sugar until a thick consistency. Add egg and beat well. Stir in bananas, dates and lemon juice. Combine sifted flour, wheat germ, baking soda and baking powder and Pecan nuts. Fold dry ingredients into mixture and blend well. 

Bake in non-stick loaf tin 20 x 8cm at 170 Degrees C for 50-60 minutes.
