Apple & Pecan Cake

This tastes as good as it looks!

Ingredients:

410g tin unsweetened pie apples
1 cup sugar
2 eggs, lightly beaten
125g pecans, chopped
¾ cup plain flour
¾ cup S R flour
1 tspn baking soda (bi-carb)
1 tspn cinnamon
1 tspn mixed spice
125g butter

Method:


Stir apples and sugar in a bowl with a wooden spoon. Add eggs and mix together. Stir in nuts and sifted dry ingredients. Melt butter and fold into mixture. Pour into a greased ring tin and bake in a moderate oven (180°C) for 40-50 minutes or until cooked when tested. 

Ice with a butter icing and sprinkle with crushed pecans.

(If preferred, pour into greased 12 cup muffin pan and bake approximately 20 minutes.)
