Banana & Caramel Pecan Crumble

Ingredients Base: 

  • 2 bananas

  • ½ cup sultanas

  • 2 apples, peeled & thinly sliced

  • 60g butter

  • ¼ cup brown sugar

  • ¼ cup orange juice

Crumble Topping:

  • 1 cup Pecan nuts, coarsely chopped

  • ½ cup shredded coconut

  • ¼ cup rolled oats

  • ¼ cup plain flour

  • ¼ cup soft brown sugar

  • 60g butter, softened



Method:

Peel and slice the bananas lengthwise.
Layer the bananas, sultanas and apples alternately in a baking dish, approximately 16cm x 13cm. Melt the butter in a saucepan, add the brown sugar and stir until dissolved. Simmer for two minutes, stirring occasionally. Remove from the heat and add the orange juice. Return to heat and simmer for two minutes.

Pour over the fruit.  Combine crumble topping ingredients.

Sprinkle over fruits. Bake in a moderate oven, (180 º C) for 20 minutes or until crumble is golden. 

Delicious served with cream or ice cream.
