Method Cream butter and sugar together. Add vanilla then egg and beat well. Sift flour and baking powder together. Add gradually to creamed mixture, alternately with pecans, mixing to a firm dough. Shape into 3 log-shaped rolls, 5cm in diameter. Wrap in gladwrap and chill in refrigerator until firm. (This mixture may be stored in the refrigerator for up to 2 weeks or in freezer for 3 months.) Slice thinly and place on baking tray. Bake in a moderate oven 7-10 minutes. Makes
approx. 70 biscuits. |
