Refrigerator Biscuits


Ingredients

  • 8 tblspns butter

  • 2 ½ cups plain flour

  • 1 cup brown sugar

  • ½ tspn baking powder

  • 1 egg

  • ½ cup finely chopped pecans

  • 1 tspn vanilla

Method

Cream butter and sugar together. Add vanilla then egg and beat well. Sift flour and baking powder together. Add gradually to creamed mixture, alternately with pecans, mixing to a firm dough. Shape into 3 log-shaped rolls, 5cm in diameter. Wrap in gladwrap and chill in refrigerator until firm. (This mixture may be stored in the refrigerator for up to 2 weeks or in freezer for 3 months.) Slice thinly and place on baking tray. Bake in a moderate oven 7-10 minutes.

Makes approx. 70 biscuits.
