Giant 3-Way Pecan Cookies
Ingredients:  Flavourings:
125g butter   Spicy Sultana:
½ cup castor sugar  ¾ cup Australian sultanas
½ cup soft brown sugar   ½ tspn ground cinnamon
1 egg
½ tspn vanilla essence  Fragrant Ginger:
1 cup plain flour   1/3 cup glace ginger, chopped
2/3 cup oatmeal
1 tspn mixed spice
½ tspn baking powder
½ tspn baking soda
1 cup chopped Pecan Nuts

Method:

Cream together butter and sugars until light and fluffy.  Add egg and vanilla essence combining well.  Fold in the combined sifted flour, oatmeal, mixed spice, baking powder, baking soda, returning husks to the sifted mixture.  Stir through the chopped Pecan Nuts.  (If desired, add additional flavourings).  Roll mixture into 2 - 2½ cm balls, place on a greased baking tray approximately 5cm apart.  Bake in a moderate oven (180°C), for about 12 minutes or until golden.  Do not overcook.

Makes approximately 30 cookies.
