Although lighter in colour than the
traditional pudding, the flavour is rich and delicious.

| 1 cup seeded raisins,
chopped |
1 cup plain flour |
| 1 cup sultanas |
1 tspn mixed spice |
| ¾ cup chopped dried
apricots |
½ cup mixed peel,
finely chopped |
| ¾ cup chopped
dried pears |
1½ cups Pecan Nuts
chopped |
| ½ cup brandy |
250g butter, melted |
| 4¾ cups soft white
breadcrumbs |
½ cup golden syrup |
| ½ cup soft brown sugar |
4 eggs beaten |
Method:
Combine the seeded raisins,
sultanas, dried apricots and pears in a bowl with the brandy. Allow
to stand for several hours or overnight. Mix together the
breadcrumbs, sugar, flour and mixed spice. Add the marinated fruits,
mixed peel and Pecan nuts. Stir in the butter, golden syrup and
eggs mixing until thoroughly combined. Fill into a greased 6 cup
pudding basin. Cover with a layer of greaseproof paper and a layer
of foil and tie securely. Boil steadily for 6 hours. On the
day the pudding is to be served boil for one hour.
